Abstract: Polyphenols such as proanthocyanidins from Cinnamomum cassia were reported to show significant antidiabetic, antioxidative, anti-inflammatory, and anticarcinogenic activities. The optimized extraction method for polyphenols from the twigs of Cinnamomum Cassia was investigated for the first time. The content of polyphenols were determined according to the Folin-Ciocalteu method. The maximal amount of polyphenols was obtained when the twigs were ultrasonic extracted with 7-fold amount of 40% acetone in 45 min. In the extracts, EGCG, caffeic acid, and ferulic acid were identified as individual phenols by HPLC analysis.
